Asparagus Anyone?


photoAfter a long winter break of eating..well a lot, I got back to Madison and my first dinner was lemon asparagus.  It was refreshing and delicious.

I simply placed cleaned asparagus on wax paper, added olive oil, salt pepper and topped them with some thinly sliced lemons, and put them in the oven at 400 degrees for 8-10 minutes, turned them and put them back in for another 8 minutes.

They were so filling so that is all I ate for dinner, but try it with some rosemary chicken and you have a bigger dinner.
